Buffalo cauliflower just got an upgrade! And ended up on top of a pizza with the best & easiest kind of crust - puff pastry. Baked crispy with cheese, and drizzled with a good amount of blue cheese sauce this is one tasty vegetarian dinner, snack or appetiser - either way, you won't be able to help yourself.

Ingredients

  • 1 batch Buffalo Cauliflower Bites (set aside 2 Tbsp of Buffalo sauce while making)
  • 1 batch Buffalo Cauliflower Bites (set aside 2 Tbsp of Buffalo sauce while making)
  • 1 batch Blue Cheese Sauce
  • 1 batch Blue Cheese Sauce
  • 2 puff pastry sheets (1 sheet = 100 g/3.5 oz)
  • 2 puff pastry sheets (1 sheet = 100 g/3.5 oz)
  • 150 g shredded cheese, divided (one that melts well, for example pizza cheese)

Steps

Take out your puff pastry sheets if they are frozen and leave out to thaw.

Then start by making the Buffalo Cauliflower Bites. Save 2 Tbsp of the buffalo sauce for your pizza but otherwise follow the recipe. While they are baking you can make the Blue Cheese Sauce.

Set your oven for 225 C/440 F and place a piece of parchment paper on top of an oven tray. Place your puff pastry sheets on top and roll out as thinly as possible.

Bring out the Buffalo Sauce you saved when making the Buffalo Cauliflower Bites. Brush the sauce on top of the puff pastry.

Add about half of the shredded cheese on top of the buffalo sauce. Then follow with all of the Buffalo Cauliflower Bites and the rest of the shredded cheese. Place in the middle of the oven and bake for 15-20 minutes, until the dough is puffy and the cheese is melted and slightly browned.

Bring out your pizzas from the oven and drizzle your blue cheese sauce on top. Slice and serve immediately!
